What is spicy chicken wings?
It is the fried chicken wings coated with spicy and sweet barbecue sauce. People know it also as buffalo wings. The buffalo wings are popular with a hot and spicy flavor. Besides, the flavor of the dish is also tangy. It is because the sauce contains many different sauces and spices.
For the texture, they also have a rich texture. It is so juicy and crispy from the fried chicken wings with a sticky and smooth sauce. Also, the sensation of gnawing the chicken on the soft bones of the wings improver the enjoyment who eat it.
I’m hungry for this buffalo wings.
In Indonesia, this dish is also popular. Many fast food restaurant provide this menu. Even, many restaurant provide only chicken wings menu. They served it with various sauce.
Sometimes, when I’m in the mood to eat something sweet and hot, I like to buy this wings to the nearest fast food restaurant. I don’t need to explain again, it is so delicious. They have different level of spiciness. So, you can choose the level based on your resistance to the spicy level. It is always on my mind.
One day, I traveled to the city in Indonesia and I was craving to the taste of spiciness and crunchiness of spicy wings. Yet, I couldn’t find my favorite buffalo wings restaurant in the city. So, I decided to make it with my sisters.
We started to imagine the taste and the texture. Then, we made it autodidact with our instinct. I didn’t know what we know, we went to the market directly without thinking twice. My sisters and I think the ingredients will be same as like what we have made. It is Baked BBQ Spicy Wings. The cooking technique that use is different in each recipe.
After the second trial, we found the perfect recipe better than our favorite restaurant. Haha, it is based on our opinion. I hope you have same opinion as us.
The Ingredients You Need
Chicken Wings – the recipe uses eight chicken wings. You can divide them into 16 pieces. The chicken wings are the most favorite chicken part because the skin is very crispy. Moreover, the bone texture of this chicken wing is also the softest and smallest.
Flour and Cornstarch – These ingredients are to coat the wings. They will make the wings texture crispy.
Spice – You can use ginger, onion, and bird’s eye chili. I use them to marinate the wings. They make the wings more flavorful.
Barbecue Sauce – everyone has their preferences on BBQ sauce whether it be tomato-based or vinegar-based. Just make sure you know the taste of the sauce.
Flavorful sauce – beside barbecue sauce, you need Oyster sauce and ketchup. This will add sweetness and chewiness.
Cooking Oil and water – You need a little cooking oil to tie everything together. Also, you need water.
HOW TO MAKE SPICY CHICKEN WINGS
Grind garlic with mortar and pestle until becoming a paste. You can use an electric spice grinder if you don’t have mortar and pestle.
Place chicken wings into a bowl, then add garlic paste, fish sauce, vinegar, and black pepper. Mix well. Marinate for 4 hours in the refrigerator.
Grind ginger with mortar and pestle until becoming a paste. Place the ginger paste into a small bowl then add 3 tbsp water. Set aside.
In a big bowl, mix flour, cornstarch, and a pinch of salt and stir to combine.
Coat the chicken wings with a flour mixture.
Then fry the chicken wings at 350°F/170°C until golden brown and crispy. Set aside and let cool on a cooling rack.
For the spicy BBQ sauce, crush bird’s eye chilis with pestle and mortar.
In a pan, heat 3 tbsp oil then saute the onions for 2 minutes.
Add bird’s eye chili paste, BBQ sauce, ketchup, oyster sauce, and ginger water. Stir to combine.
Coat the fried chicken wings with the spicy BBQ sauce.
Spicy BBQ chicken wings are ready to serve!
Some Mistakes You Have to Miss Out to Make Perfect Fried Chicken
To make buffalo wings, sometimes, it is full of obstacles. Therefore, I will share some of the mistakes I faced and share how to solve them so that you will get perfect crispy wings.
– Process the chicken first before coating it with flour.
Some people choose to steam or boil the chicken before applying the flour. Because of the fear of the chicken raw in the frying process, they like to do some steps before the frying process. In fact, boiling or steaming chicken will make it drier so that even flour can’t stick to it.
Successful deep-fried chicken is better off using raw chicken. If you are afraid that the chicken is raw inside, you can fry it over low heat. Cut into the small pieces of fried chicken if you are still afraid of it.
– You roll the chicken in the ice water first.
Dip the chicken in the ice water will keep the flour from sticking together. That’s why don’t be surprised if the flour doesn’t stick if you first dip the chicken in ice water and then the flour.
For the best process, you are better off reversing the process, dipping the chicken in the flour, then in the ice water, and back in the flour again. This method will tie the flour tightly so that it sticks to the chicken. Alternatively, make a thin flour solution from a mixture of flour and ice water. You can also add a little baking powder. This solution will bind the flour so it doesn’t come off.
– Too often to stir it during the frying process
You shouldn’t stir-fried chicken too often, especially when it’s just getting into the oil. It’s better if you give the flour time to harden and curl first, then stir the chicken. If you stir it right away, the flour will come off because it is still soft. Also, it won’t stick.
Still Crispy Even Coated with Sauce
The problem that often arises when processing chicken with sauce is that when it mix with sauce. The crunchiness of the flour-fried chicken is reduced. To avoid this problem, consider the following tips so that the fried chicken wrapped in sauce remains crunchy in the mouth.
– When making the sauce to wrap the fried chicken, make sure the texture of the sauce is thick.
The thick sauce can stick to the chicken. So, the texture of the fried chicken remains crispy, even though it’s already covered in sauce.
– Pay attention to the amount of sauce you make. The amount of sauce should be just right and match the amount of chicken you are dressing.
If the chicken is too little and the amount of sauce is too much, the sauce will not dry out once it sticks to the surface of the flour-fried chicken.
On the other hand, if not all of the chicken is wrapped in sauce, the flavor of the fried chicken will be less because the sauce does not fully absorb into the chicken.
– Don’t forget to stir the chicken when it is cooked with the sauce.
You have to keep stirring the chicken that has entered the sauce so that the sauce sticks and binds perfectly to the chicken. Stirring constantly will also make the sauce dry easily, so the texture of the fried chicken remains crispy or crunchy.
– Make sure you eat the fried chicken in the sauce right after it’s cooked.
The reason is that the longer the chicken covered in the sauce is left alone, the more crunchiness will be lost. For that, it is advisable to mix the fried chicken with the sauce just before you serve it.
