Marinate the Shrimp
In a bowl, marinate the shrimp with a generous pinch of salt, a dash of white pepper, a sprinkle of paprika powder, and a refreshing squeeze of lemon juice. Gently toss the shrimp to coat them evenly with the flavorful marinade. Allow the shrimp to sit and soak in the delectable flavors for 15 minutes. This marination process ensures that the shrimp absorbs the delightful seasoning, enhancing their taste and tenderness.
Prepare the Rice Mixture
There are two types of mixing eggs feel free what do you usually use, first you can cook the egg first, then insert the rice into the skillet, or you can mix the egg with rice in a bowl then cook them together. I chose the second step so the rice is seasoned and coated by egg evenly.
In a separate bowl, whisk the eggs until well combined. Add the chicken powder, another pinch of white pepper, a dash of fish sauce, and a touch of salt. Whisk the mixture thoroughly, creating a seasoned blend that will infuse the rice with a symphony of savory goodness. Add the cooked rice to the seasoned egg mixture and stir until the rice is evenly coated, embracing the flavors of the eggs and seasonings.
Cook the Shrimp
Next, In a large skillet or wok, melt the butter over medium-high heat. Once the butter starts sizzling, add the chopped garlic and sliced onion, sautéing them until they release their irresistible aroma and turn golden. As the kitchen fills with the alluring scent of garlic and onions, add the marinated shrimp to the pan, cooking them until they become perfectly cooked and take on a tantalizing reddish hue.
After the shrimp turn to reddish color and are cooked, gently add the rice to the cooked shrimp. Keep stirring and tossing until the rice and shrimp blend harmoniously, becoming a delightful medley of flavors.
As the fried rice comes together, add a final touch of perfection. Sprinkle a pinch of salt and white pepper over the rice, ensuring it is well seasoned.
