This snack reminds me of my childhood
My sisters and I used to love to eat snacks made of chocolate. Our mothers always make various chocolate snack creations at home. Mothers prefer to make them at home rather than buy them because homemade food can be healthier.
One of the chocolate snacks that our mother made is rice crispy chocolate roll. Actually, making this recipe is easy and quick. When we were kids, we usually asked for this snack in movie time. We liked to watch our favorite cartoon with eating the snack.
Moreover, the snack has the same texture as caramel popcorn. The taste is light and addicting. You will forget how much you eat it. You will bite more while watching your favorite movie.

How to make this recipe:
Put marshmallow and butter in a pot. Melt while stirring in medium heat. After all the marshmallows melted, turn off the heat.
Pour rice crispies into a pot then stir it until all the ingredients mix well. After that quickly place the rice crispies mix into a large short tray then shape to thin using a spatula. Set aside.
Boil water in a pot, then in a bain-marie melt the dark chocolate chips. After the chocolate melted, spread it on top of the rice crispies mix.
Gently roll the rice crispy chocolate like making sushi then cut into pieces.
Rice crispy rolls are ready to serve. Enjoy!
Tips and Tricks
- You can use mini marshmallows or big marshmallows. However, I still recommend using marshmallows in balance measure with crispy rice.
- The best thing about this dessert is fresh and new marshmallows. It will taste better if you use the marshmallows you just bought.
- Don’t overcook the marshmallows. Once the marshmallows have melted, you just need to mix them with the other ingredients immediately.
- Be careful when you press the dough into the pan. The harder you pack them, the harder and denser they will be.
- You can use a non-stick pan. You can also line the pan with parchment paper to remove treats easily.
- If using your hands to squeeze or form a rice crispy dough, lightly spray your hands with nonstick spray or dip your fingers in the water to prevent the marshmallows from sticking.
- Mini chocolate chips to fold at the end are optional but add that extra chocolate boost of fun.
- There are no rules to form it by roll. You can also use some heart-shaped cookie cutters if you want to make different shapes.
How to Store Rice Crispy Chocolate Roll
The best taste to eat this dessert is the time when you made it. If you still have the leftovers, you can keep them for 2-3 days at room temperature in an airtight container. After 3 days, they start to go bad. You can add wax paper to each layer in the jar so that the rice crispies don’t stick together.
You can extend that time by a few days if you keep it in the refrigerator and then take it out about 30 minutes before you eat it. They freeze well and that’s what we do if we want to make these ahead of time for a party or family gathering. They thaw very quickly and taste great after thawing. You can store it in the freezer for up to several months.
