The menu on a restaurant called Fire Flying Chicken, because it’s a whole chicken can fly off their crispiness tho? Hahaha sounds like a mouthwatering adventure! Let me sprinkle some history of the Richeese Factory into the mix to make this dish even more flavorful.
Picture this: back in 2011, in the vibrant city of Bandung, West Java, Indonesia, Richeese Factory burst onto the scene. It all began with a single outlet nestled in the Paris Van Java Mall. Back then, their concept was fresh and exciting: a Quick Service Restaurant (QSR) that jazzed up traditional fried chicken with a decadent helping of their signature cheese sauce.

Brine
- Whole Chicken; Spring chicken works best for this recipe. You can ask your butcher to butterfly the chicken when buying it if you are not confident with your knife skills. Smaller chickens will take less time to cook, and larger chickens will take longer. You can even use a Cornish hen to make a mini whole Cajun chicken.
- Salt; Brining helps tenderize the chicken and distribute flavor throughout the meat. Salt draws moisture into the muscle fibers, resulting in a juicier bird.
- Sugar; A small amount of sugar balances the saltiness of the brine and helps promote browning during frying.
- Garlic; Crushed garlic infuses the chicken with its savory and aromatic flavor.
- Lime Juice; Adds a touch of acidity and brightness to the brine. And to lose the fishy smell of chicken
- Water; The base of the brine that carries the flavors into the chicken
Dry Batter
- All-purpose Flour and Cornstarch; a 50-50 split of these two ingredients will give you a delicious crunch and a lovely golden breading color.
- Baking Powder; creates tiny air bubbles on the surface of the battered chicken when fried, making it crispy.
- Garlic Powder and Onion Powder; Impart concentrated garlic and onion flavors to the crust.
- Chicken Stock Powder; Adds a savory depth of chicken flavor to the batter.
- Salt and Pepper; Enhance all the other flavors in the batter.
To make Wet Batter Wet Batter⅓ of the dry batter with Water; This portion of the dry batter creates a wet consistency for coating the chicken.
- Cooking Oil; use any neutral-tasting oil with a high smoking point, such as vegetable oil, canola oil, and sunflower oil.
Spicy Seasoning
- Smoked Paprika Powder; Adds smokiness and a touch of sweetness with a mild heat.

How to Make Spicy Deep-Fried Whole Chicken
First, Place the chicken breast side down on a cutting board. Using sharp kitchen shears or a sturdy knife, carefully cut through the backbone on both sides, starting from the tail end.
Open up the chicken like a book, pressing down on the breastbone to flatten it as much as possible.
Then In a medium bowl, combine salt, sugar, and lime juice. Pour water and garlic then stir until salt and sugar are completely dissolved. Place the whole chicken into the brine, the chicken should be immersed. Cover the bowl with a plastic wrap then refrigerate for 12-24 hours. (longer brining time results in juicier chicken).
Remove the chicken from the fridge 3 hours before fry the chicken, so that the chicken is at room temperature. Pat dry the chicken with a kitchen towel and set aside.
Make the wet mixture In a large bowl, whisk together all the dry batter ingredients (flour, cornstarch, baking powder, garlic powder, onion powder, chicken stock powder, salt, and pepper). In a separate bowl, combine 1/3 cup of the dry batter mix with water to create a wet batter consistency.
Deep Fry a whole Chicken
Heat enough oil in a large Dutch oven or deep fryer to at least 350°F (175°C). Dip the coated chicken into the wet batter, ensuring even coverage.
Carefully lower the chicken into the hot oil. Don’t overcrowd the pot. Fry the chicken for about 15 minutes per side, or until golden brown, crispy, and cooked through. it should reach 165°F (74°C). Once cooked, transfer the fried chicken to a wire rack to drain excess oil.
While the chicken rests, combine all the spicy seasoning ingredients (smoked paprika, chili powder, sugar, salt, and chicken stock powder) in a small bowl.
Season and Serve

- 2 lb Whole Chicken
- 2 tbsp Salt
- 2½ tbsp Sugar
- 4 clove Garlic
- 2 tbsp Lime Juice
- 3 cup Water
Dry Batter
- 1 cup All-purpose Flour
- 1 cup Cornstarch
- 2 tsp Baking Powder
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- 1 tbsp Chicken Stock Powder
- 1 tsp Salt
- ½ tsp Pepper
Wet Batter
- ⅓ of the dry batter
- 500 ml Water
Other
- Cooking Oil
Spicy Seasoning
- 1½ tbsp Smoked Paprika Powder
- 1 tbsp Chili Powder
- ½ tbsp Granulated Sugar
- ½ tsp Salt
- ½ tsp Chicken Stock Powder
Instructions

Butterfly the chicken by cutting through the chicken breast then open up the chicken. Turn it over, laying it open and then press to make it flat.

In a medium bowl, combine salt, sugar, and lime juice. Pour water and garlic then stir until salt and sugar are completely dissolved. Place the whole chicken into the brine, the chicken should be immerse. Cover the bowl with a plastic wrap then refrigerate for 12-24 hours.

Heat cooking oil in a deep fry pan over medium heat. Coat the chicken with a dry mixture then dip into the wet mixture until evenly coated. Once the oil is hot, deep fry the chicken for about 15 minutes then flip over and cook for another 15 minutes. Rest it on the cooling rack.

In a small mixing bowl, combine all the spicy seasoning ingredients then sprinkle it all over the fried chicken.
