A family psychologist said that eating together is an activity that must continue to be done. No matter how busy, take the time to get together, and enjoy a meal together. The warmth created when eating together will become positive energy. And it will be very influential in everyday life.

It is my family’s favorite roast chicken. Why?
One of the popular food for family gatherings is roast chicken. Usually, family members are eagerly awaiting the offering of this fragrant, spiced whole chicken. Besides, family members can help each other to roast these chickens together. When I was little, my cousins and I used to help each other roast them. We were so happy to see the beautiful result of roast chicken.
Roast chicken usually uses thick gravy with lots of spices or sweet soy sauce. However, after I often make grilled chicken, I know the best way to get delicious roasted chicken without using a lot of spices. Also, this is my favorite roast chicken recipe in my whole life; after trial and error finding a classic recipe for roast chicken.
Surprisingly, you only need sea salt to season and marinate the chicken. How is the taste of sea salt roast chicken? It is delicious, of course! You will get the natural taste that comes out of the chicken. Therefore, this roast chicken has less fat, oil, and other spices. It is the reason why I say classic roast chicken.
Even though I only use sea salt to season the chicken, it makes the chicken skin clean, soft, and crispy. Besides that, I also add some vegetables under the chicken to make the chicken perfectly cooked. Moreover, these vegetables also can be a side dish in this recipe.

The Ingredients of Classic and Juicy Roast Chicken
Here is all you need:
- Medium Chicken – Chicken is an animal product that is so easy to find. Some foods that use chicken also are available everywhere. Besides, most of them taste delicious. Also, it is cheaper than beef.
- Sea Salt – Be sure you use this sea salt. In terms of taste, sea salt is tangier. Besides, it contains more minerals.
- Butter – Butter is a fat product that comes from milk. It has a distinctive savory aroma of milk. If you add butter, the food will be more appetizing.
- Vegetables – You need small potatoes cut in half, carrots cut a 1-inch length, and champignon mushrooms slice in half. The vegetables will make the heat flow to the chicken.
- Seasoning – You need garlic bulb, lemon, sprig rosemary, sprig thyme, and black pepper.
How to Make Classic & Juicy Roast Chicken
On a plate pat dry chicken with a paper towel. Coat the chicken with 1½ tbsp sea salt. Store in the fridge for 24 hours (recommended) or overnight.
On the next day, take out the chicken from the fridge 30 minutes before cooking.
Preheat oven to 175°C/300°F. Put the shelf in the middle.
After 30 minutes, rub the whole chicken with 1½ tbsp room temperature butter. Sprinkle again with 1 tbsp sea salt. Stuff lemon, half of the garlic bulb, and 1 sprig of thyme inside the chicken.
Spread potatoes, carrots, and mushrooms on a roasting pan evenly. Add 1 rosemary sprigs, 1 thyme sprig, and half of the garlic bulb. Sprinkle with ½ tsp sea salt and a pinch of black pepper. Divide the ½ tbsp butter into 4 blobs and place it evenly on the roasting pan.
Transfer the roasting pan to the oven and bake for 1 hour 15 minutes. And then turn the oven up to 220°C/350° for 15 minutes. You know the roast chicken is done by checking the temperature in the inside of the thigh is around 75°C/165°F or until juices run clear. Let the chicken rest at room temperature for at least 15 minutes.
Carve the chicken breast, thigh, and wings before serving.
Use the carrots, potatoes, and mushrooms as a tasty side dish.
Recipe Notes :
- You can add black pepper to the dry rub. I don’t because I want my roasted chicken skin is smooth, clean, and shiny.
- If you use table salt, cut the amount in half. That’s because the table salt is saltier. I really recommend you use high-quality sea salt because it’s the only seasoning on the chicken aside from the stuffing. The taste of the salt is really mattered in this roasted chicken.
- I recommend you dry rub the chicken and store it in a fridge for 24 hours. It gives time for the chicken to absorb the salt and way way more flavorful meat to the bones. The salt also makes the meat more tender and juicier as the salt holds the water in the meat.

Roasted Chicken
Ingredients
- 1 medium Chicken
- 2 tbsp Sea Salt for dry rub
- 2 tbsp Butter room temperature
- 200 g Small Potatoes cut in half
- 200 g Carrots cut 1 inch length
- 200 g Champignon Mushrooms cut in half
- 1 Garlic Bulb halves horizontally
- ½ Lemon
- 1 sprig Rosemary
- 3 sprig Thyme
- Black pepper
Instructions

Transfer the roasting pan to the oven and bake for 1 hour 15 minutes. And then turn the oven up to 220°C/350° for 15 minutes. Let the chicken rest at room temperature for at least 15 minutes.
