- 1 tsp grated Ginger
- ¼ tsp Pepper
- 1 tbsp Soy sauce
- ½ tbsp Honey
- Thai red curry paste
- 5 cloves Shallot
- 2 clove Garlic
- 1-inch Galangal
- 10 gr Ginger
- 1 large Red pepper, remove seed
- 5 curly Red pepper
- 1 stalk Lemongrass
- 5 kaffir Lime leaves, Remove the leaf bones
- ½ tsp ground Coriander
- 1 tsp ground Turmeric
- ½ tbsp Oil
- ½ tsp Shrimp paste
- ¼ tsp Salt
- 2 tbsp Water
To assembly:
- 1 pack Rice noodles
- 3 pieces of Shrimp, deveined
- 1 ½ tbsp Sesame oil
- 1 bunch Bok choy
- Thai red curry paste
- 3 Shallot, minced
- 2 clove Garlic, minced
- ½ tsp grated Ginger
- ¼ cup Fresh cilantro
- 2 cups Coconut milk
- 1 tbsp Fish sauce
- Lime wedges
How to make Thai Turmeric Chicken and Noodles
First, roughly chop the garlic, shallot, galangal, ginger, red pepper, lemongrass, and lime leaves into small pieces so they blend more easily.
Then, prepare a blender, throw in all those chopped ingredients, and blend until a thick, smooth paste. Put it aside for now.
Marinate the chicken in a medium bowl with ground turmeric, grated ginger, pepper, soy sauce, and honey. Let it sit for about 15 minutes.
While the chickens marinate, heat some oil in a skillet over medium heat.
Once it’s hot, add the chicken and cook until both sides are golden brown.
Toss in the bok choy until just charred on the edges.
Then, transfer chicken and bok choy to a plate in the same skillet, and saute minced of garlic, shallot, grated ginger, and fresh cilantro.
After that, cook it all up for about 2 minutes.
Add red curry paste, stir, and cook until fragrant.
Pour in the coconut milk, sesame oil, and fish sauce.
Add the shrimp, then slide the chicken and bok choy back into the sauce.
Simmer over medium heat until the sauce thickens slightly.
Meanwhile, cook up some noodles in another skillet according to package instructions.
Once the noodles are done, divide them between bowls.
Then, spoon some chicken, bok choy, and sauce over noodles.

Instructions
