Ingredients of Chicken Chili Drumstick
- Chicken Drumstick; you can buy drumstick parts only for the butcher. I don’t recommend to change the chicken part, because it will change the title lol. I prefer to leave the skin on – it’s so flavorful. chicken drumsticks are an excellent way to feed a crowd for a shared meal or picnic.
- Garlic powder; Offers a concentrated and convenient way to add garlicky goodness to the chicken.
- Onion Powder; Delivers a subtle onion flavor without the fuss of chopping fresh onions.
- Chili Powder; provides a warming heat and depth of flavor.
- Paprika Powder; Adds a smoky sweetness and a vibrant red hue to the dish.
- Coriander Powder; Contributes a warm, citrusy aroma and a slightly earthy flavor.
- Salt; basic seasoning
- Lemon Juice; helps balance the richness and adds a touch of brightness.
- Onion sliced; Thinly sliced onion adds sweetness and a pop of texture when cooked.
- Chili Flakes; I use them as topping as well. These add a touch of heat to the dish. Feel free to omit the ingredients.
- Cooking Oil; Use to sear the chicken drumsticks and create a flavorful base for the sauce.
- Water; Thins the sauce to the desired consistency
- Fresh Coriander; Chopped fresh coriander adds a bright, herbal note to garnish the cooked dish. It provides a refreshing contrast to the savory and spicy flavors. I also like to lightly sprinkle them with red pepper flakes. You can also use parsley as well. Both of these additions are purely optional.
How To Make Chicken Chili Drumstick
Let’s start with making two diagonal slashes on each side of the drumstick to allow the marinade to penetrate deeper, then, move on to combining the garlic powder, onion powder, chili powder, paprika powder, coriander powder, and salt in a medium bowl.
Next, squeeze the lime juice into the dry spice mixture and stir it all together to create a tangy marinade that will transform your chicken.
Once you’ve generously coated the chicken drumsticks in the prepared marinade, cover the bowl and banish it to the refrigerator for at least 1 hour, or ideally, up to 4 hours. Remember, the longer you marinate, the more flavorful the chicken will be!
Next, grab a large pan or Dutch oven and place it over medium heat. Add a drizzle of cooking oil to coat the bottom. As the oil heats up, it’ll be ready for the next step. Thinly slice your onion, then toss it into the pan once the oil is hot. Optionally, you can add chili flakes for an extra kick. Sauté the onion for 2-3 minutes, or until softened and fragrant.
After that, Carefully place the chicken drumsticks in the pan and sear them on all sides until golden brown. Then, until all sides are cooked, set aside.
Next, bring the liquid to a simmer and let it cook for 10 minutes. This allows the flavors to meld and develop further. Taste the sauce and adjust the seasonings with additional salt or lime juice if needed.
Return the cooked chicken drumsticks to the pan and coat them in the simmered sauce. Let them simmer for a few minutes to heat through and absorb the delicious sauce.

Instructions

Make 2 slashes on both sides of the drumstick.

Prepare a medium bowl, and mix garlic powder, onion powder, chili powder, paprika powder, coriander powder, salt, and lime juice.

Coat the drumsticks with the marinade and let them sit for 1 hour.

Heat a pan and add oil to the pan, sauté the onions and chili flakes until fragrant. Then, grill the chicken with a little oil until all sides are cooked, then set aside.

Pour the water into the pan, then, simmer for 10 minutes, and remove from heat.
