Indonesian fried chicken or ayam goreng is everyone’s favorite dish in my home. You will never get tired if you eat this chicken recipe. When I was a child until now this recipe is my highly requested for my mom to make. The skin so crispy and the chicken is flavorful to the bone.
Indonesian fried chicken is different from American fried chicken. The American style is breaded whereas the Indonesian is marinated by simmering the chicken with the spices then fried until golden brown.
In this recipe for Indonesian fried chicken’s spices, I use turmeric, garlic, shallot, ginger, galangal, bay leaves, and lemongrass. The spices combination makes the chicken aromatic and savory.
If you ask me what kind of food I’m not tired of, I will definitely choose this Indonesian fried chicken. I cook ayam goreng two times a week on average. That’s how much I love this recipe.
I recommend this ayam goreng served with warm rice, sambal, and raw vegetables such as cucumber, cabbage, and basil.

How to make Indonesian fried chicken – ayam goreng:
Grind shallots, garlic, galangal, turmeric and ginger with pestle and mortar or spice grinder until smooth and evenly mix.
Place chicken into a pot, then add water, spice paste, salt, bay leaves, white pepper, and lemongrass. Mix well.
Cover the pot with the lid.
Simmer the chicken for 10 minutes, open the lid then turn the chicken over so that all sides are seasoned. Cover the pot with the lid then simmer again until water evaporates about 10 more minutes. Turn off the heat. Set aside.
Your salt may have different saltiness. Therefore make sure to check it. After simmering you should taste the chicken is slightly over salted. After frying, you will find that the saltiness is reduced naturally when frying.
In a new pot fry the chicken with cooking oil at 170° C until golden brown.
After the fried chicken is cooked, rest it on a cooling rack to remove excess oil. Serve with warm rice and sambal (optional).

Ingredients
- 1 Chicken cut into 8 pieces
- 6 Shallots
- 3 cloves Garlic
- 4 cm Galangal (as big as the half thumb)
- 3 cm Turmeric
- 4 cm Ginger (as big as the half thumb)
- 1.5 tsp Salt
- 1 cup Water
- 2 Bay leaves
- 1/2 tsp White pepper
- 1 Lemongrass crushed
- 3 pcs Keffir Lime Leaves optional
- Cooking Oil for frying
Instructions

Grind shallots, garlic, galangal, turmeric and ginger with pestle and mortar or spice grinder until smooth and evenly mix.

Place chicken into a pot, then add water, spice paste, salt, bay leaves, white pepper, lemongrass, and keffir lime leaves. Mix well.

Cover the pot with the lid. Bring to boil. After boil, reduce the heat to low.

Simmer the chicken for 15 minutes, open the lid then turn the chicken over so that all sides are seasoned. Cover the pot with the lid then simmer again until water evaporates about 10 more minutes. Turn off the heat. Set aside.

In a new pot fry the chicken with cooking oil at 170° C until golden brown.

Recipe Notes
Your salt may have different saltiness. Make sure to check it. After simmering it should be slightly over salted because the saltiness will be reduced naturally when frying.
