What is carbonara?

Carbonara sauce is a typical Italian sauce used for pasta sauce with eggs, meat, and cheese. This sauce comes from the Roman Latium. For carbonara pasta options, you can use spaghetti or fettucini. Its creamy taste is in demand by pasta enthusiasts.

Did you know that the original Italian carbonara sauce doesn’t use cream but uses lots of eggs and added cheese? The way of cooking is different from usual so that you don’t cook the eggs on fire.

Some chefs in Europe say that the key to producing delicious spaghetti carbonara depends on the selection of ingredients. Italians usually use guanciale or pancetta when making carbonara. Guanciale contains pork cheeks while pancetta contains pork belly meat. As an adjustment, you can use bacon or smoked beef. Yet, you need to check that the beef is still fresh.

For the cheese, Italian usually use Parmigiano-Reggiano or pecorino romano in making spaghetti carbonara sauce. Parmigiano-Reggiano is better known as parmesan cheese. Meanwhile, pecorino romano is a typical Italian salty cheese. It has a hard texture and contains sheep’s milk. You can add common cheeses. Choose the cheese according to your taste.

About This Smoked Beef Spaghetti Carbonara

Pasta is one of my favorite food all the time. Let’s be honest, who doesn’t love pasta? Everybody I know loves pasta. My favorite pasta is spaghetti carbonara. Moreover, I really like this smoked beef spaghetti carbonara. Easy to cook, simple ingredients, and of course delicious.

Carbonara is an Italian pasta dish from Rome. The main ingredients are guanciale or pancetta, hard cheese (parmesan, pecorino, or romano), eggs, and black pepper.

The variations on carbonara may include adding peas, mushroom, broccoli, mushroom, and other vegetables.

I just knew about how to cook the real spaghetti carbonara from Youtube Jamie Oliver by the late Antonio Carlucio. However, the original recipe used pork products.

Even Italian commonly use guanciale, I prefer to use smoked beef. Besides, I found some people use smoked pancetta in the pasta. Therefore, this pasta is halal so that Muslim people can consume it.

How to Make Al-Dente Pasta

In order to make the pasta even more delicious, let’s take a peek at some of the tips for boiling pasta below, which will definitely make your pasta smooth and with the right texture. If the Italian chef says, Aldente!

  1. Use Lots of Water

If you don’t want the paste to stick together, use plenty of water when you boil it. You can choose a pot that is a bit tall and big so that it can hold a lot of water. An easy comparison, use 1 liter of water for 500 grams of pasta.

  1. The Right Time to Put the Pasta when Boiling

You also need to pay attention to the right time to put the paste into the cooking water. You should add the pasta after the water in the pot comes to a boil. Adding the pasta when the stove is just turned on will cause the pasta to clump and stick together. So, try to be patient for a moment.

  1. Add Salt to the Boiling Water

Putting salt in the pasta stew should wait until the water boils. The dose, use 1 teaspoon of salt for every one liter of water. So, if you use 3 liters of water, then just add 3 teaspoons of salt.

Take it easy, the paste won’t absorb excess salt so it won’t be too salty. This salt will add a savory flavor to the pasta itself, not just the sauce that will be added later. Hmm, yummy!

  1. Do not add oil when boiling

During this time we may have heard that pasta should be cooked using the addition of oil. This is because this oil can prevent the pasta from clumping or sticking together when cooked and drained.

Apparently, this is not quite right. The addition of oil makes the pasta oily and it is difficult to absorb the sauce. In the end, the sauce doesn’t mix well with the pasta but instead collects at the bottom of the plate. Wow, what a shame, yes.

  1. Long Boiling

Each type of pasta requires a different cooking or boiling time. You can see how long it takes in the cooking instructions, which are on the outside of the pasta.

While boiling it, use 1-2 minutes to stir it so the pasta doesn’t stick together. But don’t be too frequent because later the paste will be destroyed. For types of pasta such as spaghetti, angel hair, and fettucini, you can use a fork to stir it. As for the macaroni, penne, and fusilli types of pasta, you should use a wooden spoon.

Furthermore, do not boil the pasta until it is too cooked because it will be cooked or sauteed again with the sauce. Immediately, you remove the paste and drain the paste from the cooking water.

  1. No Need To Rinse With Cold Water

Some people suggest that after boiling the pasta, pour it with cold water, so that the ripening process of the pasta stops and doesn’t stick to one another. Even though this will remove the starch elements that are present so that later the sauce will not be sticky and mix perfectly.

  1. Use Boiled Water to Make Sauce

It turns out that the water used for cooking pasta is also useful for thickening sauces, you know. But you don’t need to use all of them. Just take 1-2 tablespoons of food and add it when you cook your pasta sauce. Because it contains starch, this water can make your sauce thicker, slippery, and delicious.

How To Cook Smoked Beef Carbonara:

Beat the eggs with black pepper dan parmesan cheese. Set aside. Cook spaghetti with salt until al dente. Cut the smoked beef in bite size pieces. Set aside.

In a pan, heat cooking oil with medium heat. Add smoked beef, sautéed 3-5 minutes.

Turn the heat to low heat then add spaghetti and the sauce. When you add the sauce, make sure the sauce not become a scramble egg, just enough to coat the spaghetti.

Take cooked spaghetti carbonara to a plate. Add parmesan cheese on top. Garnish with parsley. Your spaghetti carbonara is ready to be served. Enjoy!

Ingredients

  • 3 portion Spaghetti
  • 7 tbsp Parmesan cheese
  • 6 Smoked beef (the shape is round)
  • 3 Eggs
  • 3 Egg yolks
  • 15 g Salt
  • Black pepper

Instructions

  1. Beat the eggs with black pepper dan parmesan cheese. Set aside.

  2. Cook spaghetti with salt until al dente.

  3. Cut the smoked beef in bite size pieces. Set aside.

  4. In a pan, heat cooking oil with medium heat. Add smoked beef, sautéed 3-5 minutes.

  5. Turn the heat to low heat then add spaghetti and the sauce. When you add the sauce, make sure the sauce not become a scramble egg, just enough to coat the spaghetti.

  6. Take cooked spaghetti carbonara to a plate. Add parmesan cheese on top. Garnish with parsley.

    Maybe take away the kosher if this is made with cheese. Kosher eaters don’t mix meat with cheese.

    Found a typo: beat the eggs with plack pepper dan parmesan cheese. Maybe you’re indonesian or malaysian so you put “dan” lol i’m Indonesian so i know
