In fact, my friend from Thailand said she rarely found peanut sauce with a soft texture. The texture of peanut sauce in Thailand resembles thick grains of sand and not mud or peanut butter. In addition, it tastes spicier, sour, and slightly sweeter. Meanwhile, because of the added sweet soy sauce, Indonesian peanut sauce is sweeter. In Southeast Asia, this popular sauce has a distinctive taste in each country.

This sauce is increasingly popular throughout the world. People love it for its taste, its texture, and its multipurpose sauce. You can find the instant version at Asian grocery stores. But, if you make it from the start, you will get the best sauce flavor. The steps are easy; mixing all ingredients, adding water, and heating up.
In 15 minutes, you can get delicious spicy peanut sauce. You can pour it into a salad, eat it with rice or noodles, eat it with a meat mixture like satay, and mix it with raw or steamed vegetables like a gado-gado. You will be surprised because this sauce will disappear as soon as you serve it.
How to Make Spicy Peanut Sauce

First of all, you need to prepare all the ingredients: peanuts, bird’s eye chilis, small shallots, garlic, palm sugar block, mushroom stock powder (optional), sea salt, white pepper powder, vegetable oil for frying, and hot water.
Then, heat vegetable oil in a pan over medium heat.
Add peanuts into the pan. Next, fry peanuts until slightly dark brown.
After that, dry the peanuts and add to the food processor.


Grind all the ingredients except water with a food processor.
Grind all ingredients until the texture is smooth or based on your preference.
In a pan add ½ cup of peanut sauce mixture and water (the amount depends on your desired consistency).
Boil peanut butter sauce on low heat for 5 minutes.
Set aside and put it on a small bowl.
Serve with the main dish.

Recipe Notes:
- You can add chili garlic sauce or sriracha if you like it. Yet, the flavor will be a little different.
- If you like to change the block of brown sugar, you can change it with other kinds of sugar. But, the flavor won’t be authentic. At least, use the usual brown sugar if you can’t find the block brown sugar.
- Squeeze lime juice if you like to add fresh flavor.
- Adjust the thickness by adding the amount of water.
- To adjust the flavor, you can blend the ingredients until it’s to your liking.
- In my experience, The dry peanut sauce (before adding some water) keep for 1 month or more if you freeze it. Yet, for the liquid sauce, it keeps for 3 days only.

- ½ pound Peanuts
- 6 Bird's Eye Chilis
- 6 small Shallots
- 4 clove Garlic
- 2 tbsp Palm Sugar Block
- ¼ tsp Mushroom Stock Powder optional
- ½ tsp Sea Salt
- ⅛ tsp White Pepper Powder
- Vegetable Oil for frying
- Hot Water

Recipe Notes
If the sauce is too thick for you, you can add warm water and stir until combined. You can store it in a fridge for up to a week. Warm the sauce before serving.
And also if you want the sauce to be extra smooth, you can smooth it out with a blender after adding warm water.
